"Time Machine" is a video installation inside a 1930 Ford Model A. The work brings to life my grandfather's love letters from Miami Beach in the winter of 1936 to his fiancee living in Massachusetts. A young auto mechanic from New Hampshire, Bill Gagnon was hired to come down and work at a garage on 1st Street. Being seperated from his true love, his written descriptions are honest and frank that capture the mood and energy of this beachside city during its first boom days. Inspired by the wealth, progress, and enchanted weather, he sees Miami as a place where they can make their life together.

In reading these accounts of the town that I have called home for the last 10 years, I was surprised to discover how applicable his accounts of 70 years ago are to the Miami I live in today. Although fashion and styles have changed, the underlying mood and feel are the same. In addition, reading their love letters has allowed me to personally get to know my grandparents. I was able to read the first part of the book of their lives. I meet them when they were at the height of their youth and saw a boundless future with unending promise. I feel truly fortunate as so many people are only able to meet their grandparents at the end of their lives and know the last chapters.

"Time Machine" was exhibited at Fountain Miami in 2006 and presented by Evelyn Aimis Fine Art at PalmBeach3 as well as Palm Beach! art and antique fair in 2007. I have posted more information about this and other similar projects on: www.StevenGagnon.com

"Around the World in a NYC Taxi" is a video installation in an actual 2003 Ford Crown Victoria decommissioned New York yellow cab. What makes the Big Apple so vibrant are the people. In a NYC cab, even though you are traveling across town, you can talk with the driver who often comes from one of the four corners of the world. Videos of my interviews with various NY cab drivers and scenes of the city are projected from inside the cab onto the vehicle's windows. The main film plays on both front driver and passenger side windows. The other windows show views of streets of the city taken as if you were sitting in the cab. This allows the viewer to walk around the cab and see these cabbies talk about their profession, NY, and homelands. The project was shown at Fountain NY 2006 and ArtCologne.

When the project was exhibited at Fountain NY 2007, it received much attention and was documented in a number of online art journal websites. THE ROOT: The possibilities of uses for winter squash are somewhat staggering. Add to that their interchangeability and they start looking like the poster child for seasonal eatin'. You can bake them into a cake, muffins, pancakes. You can cook them into risotto, soup, purees. You can even toast their seeds with olive oil and salt for a nutritional and tasty snack...if you coat them with bittersweet chocolate, well, a little less nutritional---but still better for you than a lot of junk food on the market. Or you can just roast the squash simply with butter, maple syrup, salt and pepper. Hubbard squash reaches notorious sizes. Often you find them sold in wedges at markets. But if you are as lucky as I am, maybe one of your friends will bestow upon you a 50 pound squash that tests your culinary aptitude and pushes you to your creative limits! Hubbard, acorn, delicata, pumpkin, butternut, (I know I'm leaving some out)...any of these orange winter squash can be used for the following recipe. It's simple, creamy-rific and employs the best of this season's ingredients. THE RECIPE Hubbard Squash & Quince* Soup serving size: 6 to 8 prep time: 45 minutes cook time: 45 minutes 6 cups, or 3 pounds roasted Hubbard squash** 2 cups, or 1 pound cooked quince***, about 4 large quince before cooking (If you don't have access to quince, simply increase amount of squash by 2 cups) 1 medium yellow onion, peeled and coarsely chopped 2 cloves of garlic 4 cups simmering chicken stock, (or vegetable stock) 2 tablespoons unsalted butter 1/2 cup heavy cream 1 tablespoon honey fresh sage leaves, about 10 kosher salt fresh ground pepper extra virgin olive oil creme fraiche *Quince (Cydonia oblonga) is a frost hardy fruit of the rose family. Related to apples and pears, it's flavor is similar those fruits, while possessing a delicate floral flavor too. It's wonderful cooked down with a bit of honey and water, and ideal for jam and marmalade due to it's high amount of pectin. **Cut Hubbard squash into manageable roasting slices, no more than an inch thick. Cover slices with extra virgin olive oil and roast in a 400 degree oven until tender, about 40 minutes. Slice off rind cut into cubes. ***Simply pare quince and cut off bite-sized pieces. Simmer in a little water, until tender, about 30 minutes. Cut quince or substitute with apple if desired. Cover the bottom of a large saucepan or medium stock pot with olive oil and set on medium heat. When a piece of onion sizzles in the oil, add all chopped onion and garlic. Feel free to add more olive oil to prevent onions and garlic from sticking to pan. Season with dash or two of salt. Saute and allow the onions to sweat out their moisture, stirring frequently, until tender. Add honey and 3 leaves of sage finely chopped. Saute for a minute or two more then add squash and quince, stirring to incorporate all ingredients. Add stock a cup at a time, until squash and quince mixture is covered. Reserve extra stock. Allow mixture to simmer for about 30 minutes, adding any remaining stock if necessary or a thinner soup is desired. Ingredients should all be very tender and ready for blending. Remove from heat. Cool mixture for about 10 minutes. Puree mixture in blender. Remove center plug of blender lid to allow steam to escape during blending. Make sure to keep blender opening covered with a kitchen towel to protect your face and hands. Add soup by ladleful and do not over pack the blender. Puree in several small batches, removing each batch to a medium saucepan. In medium saucepan over medium heat, bring puree, cream and 1 tablespoon of butter to a gentle boil, seasoning with more

It’s a quirky answer to the apple pie that gets around. The tomatoes lend a superb gooseberry-like tartness and acid to a hearty seasonal apple pie. Amazing baked into a smokey bacon lard crust, you may never look at apple pie the same way! THE RECIPE Green Tomato and Apple Pie serving size: 6 - 8 prep time: (not including pie crust) 20 minutes
cooking time: 45 minutes preheat temp: 450 degrees (for 10-15 minutes) & 350 degrees (for 30 minutes) 1 recipe for two-crust pie pastry* 7-8 assorted pie-appropriate apples, peeled, cored and sliced into 1/8ths 1 cup green tomatoes, cored and sliced into bite-sizes 1 cup raw sugar 1/2 teaspoon nutmeg, ideally fresh-grated
2 teaspoons cinnamon 2 tablespoons butter, divided into small pats
milk for brushing In a large mixing bowl combine apples and tomatoes. As a general rule, move quickly when peeling and slicing apples to prevent discoloration. It doesn’t affect flavor, just aesthetic. You can toss apples in lemon juice to prevent discoloring, but it’s just another far-away ingredient that you really don’t need. Add sugar, cinnamon, nutmeg, butter and gently toss, coating the apples and tomatoes thoroughly. Arrange apple/tomato mixture in pre-baked pie shell, making sure that some butter pats remain on top of mixture. Cover with second pie crust dough. Crimp or flute edges of top dough with bottom crust, or with pie pan edges. Cut slits into top dough for steam ventilation. Brush top crust dough gently with milk. Bake for 15 minutes in 450 degrees preheated oven for 10-15 minutes. Reduce heat to 350 degrees and bake for 30 minutes more, or until apples are tender and crust is golden brown. Cool slightly before serving. THE ROOT: The story of cheese is older than that moldy wheel aging in some underground cellar in the European countryside. The oldest cheesemaking remains were found on the banks of the lake at Neufchâtel, near Rouen, France, (of course). In the 5th century AD Roman soldiers and athletes were fed a diet of cheese, wheat bread and figs. Ah to be a Roman soldier, sounds like heaven to me. The old cheesy story goes that shepherd's carried their milk in an animal stomach sack canteen. The reaction of the animal rennet already present in the stomach sack, with the milk caused the latter to curdle, and cheese was born. A fine example of making lemon out of lemonade...or cheese out of curdled milk. Making a homemade farmer's cheese, a ricotta-like cheese couldn't be simpler or more versatile. In the most basic of cheesemaking, heat-- with the aid of an acidic agent such as vinegar or lemon juice--allows the precipitation or the separation of solid curd (cheese) from whey (remaining liquid, containing protein, minerals & vitamins). It is obvious why you wouldn't want to waste the leftover whey as it's packed with all sorts of good things, and it has many uses. Use it in soup stocks, breads, homemade beverages...Because this is a vinegar precipitated ricotta or farmer's cheese, you have an acidic leftover whey, so keep that in mind for your whey recipes. If you're using the whey to water or fertilize your garden, make sure that it's used around acid-loving plants only, like roses, azaleas, gardenias... Just don't throw it away! THE RECIPE Homemade Farmer's Cheese yields: about 2 lbs cheese, 3 quarts of whey time involved: about 1 hour 1 gallon whole, pasteurized milk ½ cup distilled white vinegar 2 teaspoons salt (use sea salt, kosher salt...be creative) Equipment: large pot collander large bowl (to catch the whey) fine cheesecloth, or butter muslin/cheesecloth In a large pot, simply bring the milk to a slow boil, making sure to stir frequently to prevent burning or sticking. When your milk has reached a temperature of at least 200 degrees or a boil, slowly add ½ cup of vinegar in small increments at a time. The separation will begin soon after all the vinegar is added. Keep stirring until whey is obviously precipitated from curd. Remove from heat and allow the contents to sit unagitated for 15 minutes. Meanwhile, line colander with about a yard of rinsed, fine-weave cheesecloth. Set the colander in a large bowl to catch the whey. Strain the curds and whey through the colander. At this point you can add salt to the curds. The addition of salt also creates a firmer cheese by drawing more moisture from the curd, so if you'd like to keep it softer and more moist, use salt sparingly. Collect and lift the sides of the cheesecloth out of the colander and continue to strain, if a more solid cheese is desired. Your homemade cheese will last up to a week refrigerated.
